Yummy Spinach Dip


I love to cook, and when I was invited to join a recipe swap link up I was thrilled with the idea.
I had so many ideas, so many goodies that I would love to make and share, that I didn't even know where to begin. So I let my hubby decide.
I asked him to choose something special that he'd love to eat this week fully expecting him to choose homemade chocolate cake, cheesecake, fried chicken, or something that would take all day to make; but he surprised me. He choose spinach dip.
This recipe is one of our favorites. We practically lived off of it when we first got married. After many years we've expanded our meals to include all kinds of yummy food but we still love our dip and it's a favorite snack for parties or movie night.
It's quick and easy to make which is great for a mommy with a busy schedule.


Spinach Dip Ingredients:


1 package spinach
1 cup mayonnaise 
1 package cream cheese
1 cup Parmesan cheese (1/4 cup reserved)
1 clove garlic
1/4 cup minced onion
1 teaspoon paprika
salt and pepper to taste
tortilla chips of your choice

Special notes:
* I use fresh spinach for the best texture and flavor. You can use frozen but it will be a little chewy and it'll water down your dish unless it has been thawed and dried.

* Miracle Whip is not a good substitute for mayonnaise in this dish (I've tried it and it did not work well)

* I use dried minced onions but a small onion will also work really well


Directions:
* Preheat oven to 350 degrees
* Combine all ingredients expect chips, spinach, and 1/4c of Parmesan cheese into a bowl and mix well
(chopping up the cream cheese or using mixer helps make this easier)
* Add spinach and stir until completely covered with mixture
* Put mixture into a large casserole dish
* Sprinkle with remaining cheese and and a dash of paprika for color
* Bake for 30 minutes or until heated through
* Enjoy with your favorite chips

Victorian Pearl Digitial Stamp

Hello everyone,
I have an adorable new digi for you all today.
This is Pearl, my little vintage Victorian girl. 
She was a special request from my mom and was so much fun to create.

I think she is so sweet with her glasses ,button dress, and braided hair.
She's just so quirky and cute.

It took me two attempts to create Pearl. I had her inked, printed, colored and was starting to place her on a card when I realized something. She didn't look quite right. I had to stare at her for quite a bit before I put my finger on the problem. I forgot to give her eyelashes and brows. Whoops. I had to laugh at myself over it. A little editing and I had her perfect.

Coffee with Friends


Good morning,
You were on my mind, so I though I'd share a cup of coffee with you and tell you some of the fun tidbits going on in my life right now.  So grab a cup and join me, I've save you your favorite chair. Lets have some fun friend time.



If we were having coffee this morning I'd tell you about an online recipe swap that I was invited to. It's this Friday. I'm so very excited about co hosting this new link party and I've been planning my recipe for days. I love to cook and can't wait to share one of my favorite dishes. And the best part is everyone will be welcome to join in and add their recipes too.



I'd update you on my cuddles new art table. He still loves it and I'm still not allowed to move out of my chair.
Which I honestly love, but I think I need to make a cushion for it, lol. 
And jumbo sized children's crayons are not so easy to color with.

We've nearly filled an entire Disney coloring book with bright and vibrant scribbles. Once it's complete I'll put it in my mommy memory box to save and cherish forever.



I'd tell you about my latest digi. She was a special request from my mama and it just so quirky and cute. We both just love her. She is adorable but so different from my normal girls. I hope to have her inked and colored by Tuesday so that I can share her with everyone.



I'd tell you that I ordered new Copics last week. I was thrilled to see a box on my porch after only 24 hours!
However, I was a little bummed to see that they shorted me 4 markers and sent me an unusual drawing book that I didn't order. Hmmm... so on Monday I will be calling the store and asking if I can trade the book that I didn't order for the markers that I did, lol. 
Fingers crossed.


So this has been me and my last few days. I've enjoyed them so very much and loved sharing them with you, but enough about me.

Clara Digital Stamp


Hello everyone,
Isn't it great when Saturday rolls around.

I spent yesterday shopping with my mom. It was so much fun. Just a girls day to browse and shop.

We found a great Crayola art table for my little guy and grandpa was nice enough to put it together for us while we finished our day out.

We spent the rest of our night sitting and coloring at this tiny toddler table and eating hot fudge brownie lava cakes, that we made from a wonderful Pinterest recipe. (best part was they only took a few minutes to make and cook)  Such an amazing way to end the day.

My little man knows that I color a lot, so this is our thing. Everytime I get up from the table he gets upset and he won't let anyone else sit in my chair, lol. It really is so cute and it is nice to have something special to share  with him.

This morning I woke with so much motivation to create.
