This is a Chaos Blade build at 40 Dex. You can switch the Heater Shield for the Grass Crest shield, switch the Chaos Blade for the Iato or Uchi and I forgot to add you need the Thorolund Talisman in your off hand so you can switch to it to heal. The healing is intended for arena after you kill the enemy so you can top up whils he is respawning. The Gold Tracer in the off hand is amazing and builds up bleeds so fast and will eat through people rather quickly. This is my fave build. The armour and rings are the same as the MLGS build I have posted. The Chaos Blade is a good weapon, the running R1 attack has INSANE range, but the R2 attack is borderline useless.
If you find you want to hit people who are blocking you could always trade out the Tracer for the Shotel as it can hit through shields. Its up to you how to upgrade the shotel, but I like to use mt Titanite Slabs on main hand wapons so I would probably use a Chaos upgrade.
This is a Moonlight Greatsword build for PVP at around SL100. You will need to keep repair powder with you, utilise the weapons dead angles (I will show you these) and catch opponents off guard with your dark magic. The poise is very high, the armour isn't the best for defense and I'm not sure on what catalyst is best to use just yet. You can switch the helm for Mask of the Mother and drop your characters attunment slots if you don't want the magic which will result in more HP. This build hits hard.
Because this build lacks a heal it is probably not the best for arena.
