2 EL Butterschmalz
4 große Zwiebel(n), gewürfelt
2 EL Tomatenmark
1 Karotte(n), gewürfelt
50 g Knollensellerie, gewürfelt
0,7 Liter Rotwein
1 kg Rindfleisch, gewürfelt
300 ml Rinderbrühe
1 TL, gehäuft Paprikapulver, edelsüß
1 TL, gehäuft Paprikapulver, rosenscharf
Salz und Pfeffer
2 Lorbeerblätter
evtl. Saucenbinder

Hackfleisch und alle Zutaten bis und mit Pfeffer mischen, von Hand gut kneten, bis sich die Zutaten zu einer kompakten Masse verbinden. Masse in ca. 20 Bällchen formen.
Öl in einer weiten Bratpfanne heiss werden lassen. Bällchen portionenweise bei mittlerer Hitze rundum ca. 10 Min. braten, herausnehmen, warm stellen.
Butter in derselben Pfanne warm werden lassen. Champignons andämpfen. Wein dazugiessen, fast vollständig einkochen. Bouillon und Rahm dazugiessen, ca. 10 Min. köcheln, würzen. Fleischbällchen wieder beigeben, nur noch heiss werden lassen. Johannisbeeren und Petersilie darauf verteilen.
