I like the game itself basically is a better performance of EU4 mod M&T, so I would still continue to play the game I like.

But I wouldn't recommend buying EU5 unless it's on sale, why? First, Because it's a paradox game, what did you expect? But besides the money problem, this game still has many reasons for not buying.

There are already many people complaining the UI is ugly and unnecessary, and it is. But I believe it will just take a month before mods come to fix this. You can already find UI mod that delete the 3D person face and leave longer banners on the first day. So the UI problem might fixed by mods, just wait it.

The AI is not challenging as a nice opponent, you could find yourself in a great danger from the coalition because of the high AE, typical EU4 moment. In EU4, AI will always declare war even when they not fully stronger than you, but in EU5 AI couldn't even defend themselves in a normal war. Considering the system complexity and Paradox still use the Clausewitz engine, the AI becoming more stupid was expected. But the AI is the only thing that opposes you in the game, unless you find another idiot who buy this game too, so it's does affect a lot of the game experience.

It's still has more or less problems I find, or I just ignore some of them, like the economic system are actually can be done by automating, but that's not the way I play it so I skip to complaining about it. Or the annoying ticking sound when you're playing on speed 5.

And the most importantly, the game itself still lacks content. Paradox is not first time release a game that lacks content... or in fact. All the Paradox games are bland when are they released, Hoi4, EU4, Ck3, Vic3. Same as EU5, so the best and recommended way to have fun in EU5, is wait it get two or three DLCs. And maybe DLC could also bring missions tree back.
